Nori Pasta

This nori pasta is a fast 15 minute dish that you can pair with any protein! Seafood, fish, chicken, tofu - they're all good! You can find dried seaweed (nori) in a lot of regular grocery stores now, I've seen it at Kroger (Smiths), Costco and others.

Estimated Cook Time: 20 min (or however long it takes water to boil where you are)

Cutting board
Chef Knife
Measuring utensils (ha!)
Small food processor
Pot for cooking noodles
Pan for cooking protein
Something to grab noodles with and mix
Small cup
Tips and Tricks:
I use large sheets or nori and tear them up, if you can't find those - grab the small packs from the store. They work just as well, be careful of anything flavored ("teriyaki") - it'll introduce an odd flavor to your pasta.

Protein 8 oz Protein (tofu in the video) 1 T neutral oil Sauce 3 T Garlic scapes (optional) 3 sheets of Nori (seaweed) 2 tsp soy sauce 1 tsp sesame oil 2 tsp Sugar 3 egg yolks 1 clove grated garlic 2 servings pasta Garnish Green onions Sesame seeds | Prep your desired protein. I pan fried seasoned tofu. If using garlic scapes, sauté and set aside. Grind up the nori, and place into a bowl large enough to mix all the noodles into. Into that same bowl put the rest of the sauce ingredients, include the cooked garlic scapes. Taste and adjust seasonings, depending on the type of nori used you may want more sugar, garlic, or sesame oil to balance. The sauce should be quite thick. Once noodles are cooked, remove from heat and put the noodles directly into the sauce. Be careful!!! If you're leaving them in the water, these can overcook quickly. Alternative strain the noodles, and reserve 4-5 T of pasta water to help emulsify the sauce. |
